Coffee Houses Became Common Meeting Places

How do you make really good hot chocolate?

Since it's winter (really really cold) and I walk to school everyday, I was thinking that I should make some hot chocolate every day for on-the-go. (I'll put the hot chocolate in my to-go gloria jeans coffee cup thingy I've got). How do you make really good hot chocolate that doesn't take long to make?

*French Hot Chocolate

Prep Time : 2min
Cook Time : 5min

6 oz. semisweet chocolate, chopped
¼ cup plus 3 tablespoons hot water, divided
3 cups hot milk
Sugar, to taste
Whipped cream
Chocolate curls

Using a double boiler or a heat-safe glass bowl over simmering water, melt the chopped chocolate into ¼ cup of the water. Stir in the 3 tablespoons hot water and milk until the chocolate mixture is smooth.
Pour the hot chocolate into cups and add sugar as desired. Garnish each cup with a spoonful of whipped cream and a few chocolate curls.

note: For a different flavor, use chopped bittersweet or white chocolate. Remember to choose premium a premium chocolate brand for the best hot chocolate.

*Special Hot Chocolate
It's special because it's so simple. Using unsweetened chocolate brings out the bold cocoa flavour. You'll be making this hot chocolate all winter long.

2 1/2 cups milk, scalded
2 oz unsweetened chocolate
1/4 cup sugar
1 tsp vanilla
1/8 tsp salt

In a blender, combine chocolate, sugar, vanilla and salt, with 1/2 cup of the milk. Blend until smooth, then add the rest of the milk. Serve immediately.

*Creamy Chocolate Espresso
You don't need much coffee flavour to improve on an already excellent hot chocolate recipe. Home-made whipped cream is always best, if you have the time to make it.

4 tbs instant coffee crystals
1 cup boiling water
1 cup hot chocolate powder
1/2 cup heavy cream
1 1/2 tbs sugar
1/8 tsp ground nutmeg

Dissolve coffee crystals in hot water. Add hot chocolate powder and mix well. Pour into demitasse cups. Whip cream with sugar until stiff peaks form, and dollop on top with a dash of nutmeg.Serves 4

*President's Hot Chocolate
Hot chocolate that's good enough for the White House, with both milk and light cream. No fuss with melted chocolate, since it's made with cocoa powder. Give it a whisk for a foamy touch.

6 tbs unsweetened cocoa powder
6 tbs sugar
2 1/2 cups milk
2 1/2 cups light cream
1/2 tsp vanilla
Cinnamon, whipped cream and orange zest

Add sugar and cocoa to milk and heat in a saucepan until dissolved. Add the cream, cinnamon and vanilla. Heat until almost boiling. Mix well and serve, topped with whipped cream and a bit of orange zest.

*The Best Hot Chocolate

1 pint milk
2 tablespoons the best hot chocolate powder
A handful of marshmallows

Firstly, put a pan of milk on to the heat. Bring to a simmer, not a boil, and while it's heating, put a tablespoon of chocolate powder into each mug. Add a little warmish milk from the pan to each mug, you just need enough to dissolve the chocolate powder.
At this point, plonk a few marshmallows into each mug. When the milk is at a simmer, carefully pour it into a plastic jug or flask. I normally do this over a sink as I always end up spilling a bit (the trick is to have a big enough jug or flask so the milk only half fills it: you need the extra space for shaking and frothing).
Screw the lid on tightly, place a cloth over the lid for safety, and shake hard for a minute. Remove the lid, minding the steam, and pour into your mugs. A little stir and you can slurp your way to heaven!

*White Hot Chocolate

1 cup white chocolate chips
1 cup heavy cream
4 cups half-and-half
1 teaspoon vanilla extract
Vanilla whipped topping, for garnish
Mint leaf, for garnish

In a medium saucepan over medium heat, combine white chocolate chips and heavy cream. Stir continuously until white chocolate chips have completely melted. Stir in the half-and-half, and vanilla extract. Stir occasionally until heated through. Pour into mugs and top with a dollop of vanilla whipped topping and garnish with mint leaf.

what is the difference between the different blends of coffee (mild, medium roast, etc.)?

Roasting coffee and blending coffee are two different processes. A coffee roast refers to the cooking of the beans. There are different types of roasts from light, mild, city, commercial, medium, dark, Italian,Viennese,French, and espresso. Depending on who is doing the roasting, they may use a variety of the names. The beans comes from different parts of the world and have different characteristics that lend themselves to different types of roasts. In general, the darker the roast, the less the caffeine, but the more burnt the roast, the more the overtones of flavors that taste burnt are.
Blending is the art of matching beans with complimentary flavors together to get a richer, more flavorful set of characteristics. The best example is called Mocha Java which is usually a mixture of Ethiopian and Indonesian beans.
Coffee drinking is like wine-tasting in that the conditions of the preparations (such as cleanliness, pH of water and soil, drought and/or flood conditions in the growing season) all contribute to the taste.
Two common mistakes made in coffee preparation is not cleaning their coffee-maker frequently and over-brewing
It is important to learn the different flavors of different coffees before you attempt to blend them as too frequently bad (non-complementary) blends are marketed by "Starbuck's experts" also known as people who don't know anything about coffee!

Coffee pods are expensive. Ever wish you could just make your own? Not only would you save money, but you'd also be able to put whatever coffee you wanted into that brewer instead of whatever happens to be offered in the shape of a little pod, all while enjoying the convenience of one cup brewing. Making your own coffee pods is not as hard as you might think, either.

Lounging around your kitchen cabinets is likely all the things you'll need to make your own coffee pods. First, find a measuring scoop that fits neatly into the pod holder on your coffee pod brewer. A 1/3 cup seems to be a common fit, but experiment a bit and see what works best for you.

Now, find a glass or jar that will fit tightly into the measuring scoop. Many use vitamin jars for this step, but whatever fits will work. Lastly, see if you have any standard coffee filters that are intended for the small 4 to 5 cup coffee machines. These are necessary, as they will be your outer shell, so you may have to go buy some, but they're not very expensive at your local grocery store.

Take one of your filters and shape it evenly over the end of your jar, glass, or whatever you found that would fit. Attempt to center the filter, but it's not necessary to be perfect when creating your own coffee pods. Now, flip the jar and filter and press it into the measuring scoop. To get a nice, tight edge in the filter paper at the bottom of the measuring cup, you'll want to spin and press the jar a bit.

Remove the jar, and you'll have a cup-shaped filter still sitting in a measuring scoop. Add about two teaspoons, or a scoop of whatever ground coffee you want to use into your filter-paper-cup-thingy. A typical coffee scoop that comes with most coffee makers will hold 7 grams of coffee, which is usually a good amount for coffee pods. Shake the cup to spread the ground evenly across the bottom of the filter, then fold the extra filter material gently with your fingers to completely cover the ground coffee.

If you just have to have really well formed coffee pods, place the jar into the scoop again and put some pressure on it with your hand.

Just flip the scoop and, voila, home-made coffee pods!

I got an espresso machine for a present. Can I drink a whole pod?

The little pods, if I make 1 small cup of "espresso" (I don't know how authentic this machine is), how many oz. should I drink? & do I dispose of the pod after? Is is single use?

You're not going to overdose, but I drank a pots worth of coffee in one cup one time, and it got scary for an hour or so.

If you don't drink coffee every day you should drink maybe 1-3 small cups at the most then see how it affects you.
