Home made yogurt question...?
I recently brought a yogurt maker. Following the manufacturers instructions, I used 1/2 a cup of yogurt with bio cultures to mix with the milk, then saved 1/2 cup of the yogurt I made to use for the second batch. The first batch turned out ok, a bit of curds, but for a first attempt, not too bad at all. The second batch was very stringy and slimy, so I brought some cheese cloth and strained the yogurt. The first time, I used a single layer of cheese cloth, and the whole mixture passed through it. I then folded the cloth several times and strained again. A lot of curds came out, and when it had finished dripping out, I transferred the remaining yogurt to a bowl. It was still stringy and definitely not the right texture! What am i doing wrong?? The taste is there, but the texture is all worng. Please help!
I can't help much, as I usually go on taste alone, and don't mind the texture, when it doesn't turn out right, I buy a new natural yogurt and start again.
But I never get curds in mine, I only use fresh pasteurized milk, or when I get it, unpasteurized milk.
Perhaps you should leave the yogurt maker on for a while before you add the culture and milk, to reach the correct temperature, and be sure to mix well.
