Is a really big bowl of roasted carrots a healthy dinner?
I love roasted carrots, and serve them as a side dish often. I just stick them under a roast or a chicken and let them cook with the meat. Tonight, though, I'm just cooking for myself and I'm thinking of taking like five carrots, peeling them, cutting them into sticks, tossing them in some olive oil (like three tablespoons) and roasting them in the oven. Is that a healthy dinner? Any idea how many calories would be in it?
An average tablespoon of oil is 1/2 an ounce. So 3 tablespoons=1.5 oz of oil= 400 calories from oil alone. Regardless of whether you eat them alone or as a side dish, you should probably cut down on the oil- the carrots actually taste better when they are roasted/braised and not smothered in oil. A tablespoon is enough to lubricate a whole pan of carrots. Try braising them with some sugar or couple tablespoons of ginger ale. It sounds weird, but it's actually really good and fat-free.
If you use less oil, they will have a lot less calories.
It's fine to eat them on their own once in a while, if you don't feel like cooking- we all do stuff like that. Just be aware that there's no protein in carrots, so you'll be starving in the morning.
